2 large red onions
1 tsp aji amarillo molido
2 garlic cloves
1/4 cup vinegar
2 fresh aji (I replace with some yellow bell peppers)
oil, salt, pepper, cumin
Season fish, flour and pan fry. Set aside.
Sauce: cook aji, onions, bell pepper, garlic until golden and season to taste. Add vinegar and boil for a few minutes.
Serve over fish over rice, and sauce over fish :)
