2 Egg Yolks slightly beaten
2 Cups Milk
2 Tbsp Sugar
2 Tbsp quick-cooking tapioca
1/4 Tsp salt
1 Tsp Vanilla
2 Egg whites
1/4 Sugar
Coolwhip (optional)
Combine half of egg yolks (save other half for later), milk, 2 Tbsp sugar, tapico, and salt in saucepan. Cook over low heat stirring constantly until mixture boils. Remove from heat and stir in remaining egg yolks. Remove from heat. Beat egg whiles until foamy. Beat in 1/4 cup sugar 1 tbsp at a time; continue beating until stiff and gloassy. Fold into hot tapioca mixture. Cool slightly add vanilla and chill.
