2 1/2 to 3 Lb Chicken parts (Legs, thighs) completely thawed.
--Coating
1 TBSP Corn Startch
1/2 Cup Flour
1 Tsp Salt
1/2 Tsp Paprika
1/2 Tsp Pork BBQ Spice
1/4 Tsp Black Pepper
--Egg Mixture
1 Large Egg
1 Tbsp Water
Wash chicken and pat dry. Mix flour, salt, parika, BBQ spice, and pepper. Put mixture in a plastic bag and put one piece of chicken in bag at a time. Shake until chicken is coated. Remove from bag and dip into cold water. Let most of the water drip off and place back in bag and shake again. Repeat on all chicken.
Heat 1/4" oil in a large skillet at medium heat. Fry chicken for 15-20 minutes or until golden brown. Reduce heat and cover for 30-40 minutes until pieces are fork-tender. Turn chicken once or teice to assure evan cooking. Remove cover for last 5 minutes of cooking to crisp chicken.
