1 1/2 Cup Flour
1/3 Cup Sugar
3 Tsp Baking Powder
1/2 Tsp Salt
2 tsp vanilla
1/2 tsp almond extract
1/3 cup oil
2 Tbsp Buttermilk powder (optional)
1/2 Cup Milk
2 Large Eggs

1/3 Cup Brown sugar packed
1/4 Cup Flour
1/2 Cup Quick or whole oats
3 Tbsp Butter (frozen cubes best)
1/8 tsp baking powder
1/8 tsp salt
Mix all cake dry ingredients and then add liquid ingredients and mix with a mixer or hand mixer until very smooth (about 2 minutes on high) and pour into greased or parchment paper lined 9x9x2 baking pan (or similar).
Chop crumble topping in food processor until totally blended and fine. Sprinkle on top of batter in pan.
Bake for 30-40 miuntes at 350 degrees or until center reads 190 degrees F.
