2 super pie crust with 1/2 cup shortening rather than 1/3 cup.

8 heaping cups of Granny Smith apple chunks
3/4 cup sugar
2 tsp cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger
1 tbsp lemon juice
4 tbsp flour
2 tsp melted butter
1/8 tsp salt
Combine apples and all ingredients and put into pie pan with bottom crust in place. Place top crust and frill edges.

Bake for 15 minutes @ 425F / 220C
Turn down oven
Bake for 50 minutes @ 350F / 180C
