Cookie Crust:
1 Cup Lemon Cake Mix
1 Large Egg
1/3 Cup Oil
Topping:
8oz Cream Cheese (full fat only please!)
1 Large Egg
1/4 Tsp salt
1 TBSP Tsp Lemon Juice
1 TBSP Lemon Zest
1/4 cup Granulated sugar
Make Cookie Crust and sprinkles:
Mix Lemon Cake Mix, Egg, and oil in bowl until crumbly. Save 1 cup of the crumbs and set aside.
Press the rest of the lemon cake crumbles into a parchment paper lined 13" X 9" cake pan to form a 3/4" crust.
Bake crust for 10 minutes @ 350 degrees.
Make Topping
Mix Topping ingredients with a mixer until really creamy and spread on crust evenly. Sprinkle the remaining 1 cup of crumbles on top of the creamy topping until covered evenly. Bake for 15-20 Minutes at 350 degrees. Cool completely and then cut into squares to serve.
