Bread:
22 oz (4 1/4 cups) flour
1 1/2 cups warm milk
1 Tsp vinegar
2 Tbsp softened butter
1/2 cup white sugar
1 1/2 tsp salt
2 tsp cinnamon
3 tsp yeast
Filling:
1 stick softened salted butter
2 tbsp cinnamon
2 tbsp corn starch
1/2 cup dark brown sugar
1/8 tsp salt
Icing:
2 cups powdered sugar
2-3 tbsp milk
1/8 tsp salt
1 tsp Vanilla
Bread:
Combine milk and vinegar in measuring cup and microwave for 1 minute or until milk solids start to separate. Then mix with whisk to recombine.
Combine flour, yeast,salt, cinnamon, sugar into a kitchen aid mixing bowl and using the paddle start to combine. After combined, add milk and vinegar mixture. Let mix fully with paddle. Once mixed, use a scraper to bring dough into the middle and change to dough hook. Add the two Tbsp of butter and knead at speed 4 for 8-10 minutes until the dough pulls away from sides and looks a little shinny. Remove from bowl and place into grease bowl, cover and set aside to raise in a warm place (at least 90 degrees). Raise until 2.5 times size about 1.5 hours.
Once dough is raised remove from bowl and knead for about 2 minutes or until all the bubbles seem to be out of the dough. With a rolling pin roll the dough out until and a 1x1.5’ rectangle that is about 3/4 inch thick.
Combine all filling ingredients into a mixing bowl and mix until smooth. Take a rubber scraper and spread filling on dough rectangle evenly leaving the very top of one of the longs sides of the rectangle without filling.
Then, starting at the long side of the rectangle that had filling all the way to the edge, evenly roll the dough into a log tightly. Do not leave any space in the center of the log. Then pinch to join the wrapped up log together so it is one smooth tube.
Get a 9x13” baking pan and grease. With a very sharp knife cut the log/tube into 9 cinnamon rolls and place them in the pan. Spray tops with oil and place into warm place to raise and double. About 1 hour.
After double bake in preheated 350 degree oven for 25-30 minutes or until the center of the biggest cinnamon rolls read 200 degrees.
