2 cups coconut milk
1 cup milk
1/2 tsp salt
1/3 cup flour
2/3 cup sugar
3 egg yolks
1 cup plus 1/4 cup for topping toasted coconut
2 tsp vanilla
2 tsp coconut extract
2 Tbsp butter
1 baked 'Super Pie Crust' recipe
Mix milk, cream, sugar, salt and cornstarch in large saucepan. Heat over medium heat stirring constantly with a silicone coated whisk until mixture starts to thicken. Add 1 cup coconut cooking until mixture comes to a simmer,then spoon a small amount of hot pudding into the eggs whisking as you do. Then whisk tempered egg mixture into simmering pudding. Remove from heat and stir in vanilla, coconut extract and butter; pour into prepared crust. Cover and chill at least 4 hours. When ready to serve, top with whip cream or cool whip then sprinkle with 1/4 cup remaining coconut.
